Tomatoes

I feel really terrible to be posting this so late, but I had no idea this would happen.  So, for those who are observing Shemitah this year, tuck this away for fall of 2016.  Before the forecasted freeze in late October or early November, I brought plants in as well as picked all the green tomatoes and peppers.  In late autumn, fried green tomatoes are a treat, and I usually can a few jars of sliced green tomatoes with a jalapeno.  Those are delicious fried, with a bit of cream cheese spread.  Hot fried green tomatoes taste like hot poppers when cream cheese is added.





This year, however; I was virtually out of jars in preparing for Shemitah, and a couple of rounds of fried green tomatoes were enough.  I placed the rest of the tomatoes in a wire basket, and interestingly they have slowly ripened.  I fixed guacamole just last night with fresh tomatoes that ripened in the basket.

The tomatoes are well aerated in this wire basket, which I'm sure is imperative, and they aren't stacked deeply.  These tomatoes are just as juicy and flavorful as the summer harvest fresh off the vines.
